In Spain, they served tapas and called these places ‘bodegas.’ The British sold sausage and shepherds pie and France offered stew and soups.
After the French Revolution, many aristocratic chefs were unemployed and ended up finding jobs and starting their own places of business throughout Paris and other parts of France. Some say this is the beginning of fine dining.
In America, the same public eateries developed. When it wasn’t the roadside diner, the truckstop restaurant, the mom and pop waffle house, the restaurant bar, we got it all here and it was just as much a part of our culture as any other country. Today, the variety is endless, as cuisine from other countries mixes with contemporary ideas.
